As a teacher I could definitely see blogging as a good tool in your classroom. One why I could see if used is having an all class blog site where everybody can post. The students could post about the class, or even questions on the homework. Blogging is just another classroom management tool to increase the communication and cohesion in the classroom.
Another way I could see this used in teaching successfully, is to post your lesson plan on the blog site where the sub can find them. They can read your blog and blog back to you if there are any questions on the material. You could post pictures and visual aids to help the sub figure the lessons plans out.
Nice variety of examples. I think you'll find that posting actual Lesson Plans will fall apart in a blog environment. Google Sites is every bit as quick and efficient --- but a far superior management system.
